Don’t forget to take your vitamin B-12, D, and your Omega. You can get your vitamins through your veggies as follows:
- Vitamin D – Eat mushrooms or get at least ten minutes of beautiful sunshine
- Vitamin B-12 – plant based products and plant milks.
- Iodine – Kale, green beans, seaweed are to name a few.
- Omega 3 – chia seeds, seaweed, flaxseeds, walnuts, hemp seeds, and algae.
For me I try to eat the veggies to cover me on my vitamins but I do take my B-12 just in case. So many different articles about taking vitamins so I try to get what I need from the food I eat. Another great time is to avoid caffeine by replacing your cup of coffee with a piece of fruit. I gave up caffeine a month before I started on this vegan journey because I think it definitely was playing a part in my high blood pressure. As for Tofu and Quinoa I am not a fan. I keep trying it because maybe one day my taste buds will welcome them both. I will continue to stick with the foods I enjoy for now.

Since I have been focusing on no animal products, no dairy, and no oil my focus has been on the whole grains, beans, veggies and fruit. Without any concern on how much I eat I have been consistently losing weight and my blood pressure has been pretty good. Just waiting for the thumbs up from the doctor so I can get off the blood pressure medicine.

If I do not balance the plate my energy level decreases. The last thing I want is the urge to take a nap right after lunch. I do not miss those feelings. So the goal is to pile on the veggies and match it to the starch on the plate.

So far this has been a big transition in changing the way I eat and now incorporating exercise. It is a long road ahead but if I continue to focus on the choices I make today then that is all that matters, the rest will follow.
